Like life, Thanksgiving is not really all that hard if you are organized and plan ahead. Have you table set, groceries bought and make as many things ahead of time as possible and you you have the perfect game plan for a stress free dinner. One of my favorite recipes for the holidays is Cranberry Salsa which I discovered back in 1990 while we were living in Chicago and I was preparing Thanksgiving for the first time for our out of town family. I clipped the menu out of the Chicago Tribune and followed it all the way. Dinner was a success but the next day I was totally wiped out, only to realize that I was pregnant with #3.
Cranberry Salsa
1 minced serrano chile, seeded
2 cups cranberries coarsely chopped
1 tbsp grated orange peel
3 tbsp chopped cilantro
3 tbsp orange juice
1 tbsp tequila
2 tsp grated fresh ginger
1/4 tsp cumin
1/4 cup honey
How to prepare
Combine all ingredients. Mix well and store in refrigerator. Makes 2 cups.
