Fried Okra Three Ways

Once upon a time I thought there was only one way to eat okra… Fried the Southern Way.  I do remember my Dad using just cornmeal as a dusting, shaking them in a brown lunch sack to coat.  Well now I cook okra both ways, depending on how healthy I'm feeling I should eat that day and how much of a mess I want to deal with.  To add to the mix, I have just added a third extremely healthy and easy to make version. All you have to do is coat the okra in some olive oil, season with a spicy mix and either cook on the grill or as I did, in my cast iron skillet.  With all this focus on okra, I'm glad to share that okra is one of the most low calorie, high fiber and lots of vitamins and minerals food item that you can eat.  So fry or grill yourself up some okra.  For cornmeal version go to OK-RA.  For grilled version, I used Gena Knox recipe from Southern My Way. 




Toss 1 1/2 lb of okra in tbsp of olive oil.  Mix 1/2 tsp ground cumin, 1/4 tsp ground coriander and 3/4 tsp of salt.  Toss okra in seasonings and then cook on oiled grill for 3 to 4 minutes per side or as I did, in cast iron skillet.
